This cake with boiled oranges is very tender and flavorful. It does not contain wheat flour – instead, almond flour. Thus, the baked dessert is gluten-free. If you do not have almond flour, pour boiling water over raw almonds for 10-15 minutes, then peel them. After this, dry the nuts, and then roast them in your oven or frying pan until they become fragrant. Cool the almonds and chop them thoroughly in a blender.

Ingredients
Oranges – 2 pcs.
Eggs – 4 pcs.
Sugar – 200 g
Almond flour – 300 g
Leavening agent – 1 teaspoon.
Orange liquor – 1 tablespoon.
Directions
Cover the orange with some water in a saucepan. Put it on the heat, let it boil, and simmer for 25 minutes.
Pour out the hot water and cover the oranges with the cold water again. Cook them for another 25 minutes and then pour out the water.
Cut the boiled oranges into small pieces. Place them in a bowl and mash until smooth.
Add the almond flour, leaving agent, and liquor to the oranges and mix everything gently.
Separate the eggs into whites and yolks. Whisk the yolks with a third of the sugar into a fluffy foam for about 10 minutes.
Whisk the whites into a fluffy foam adding gradually the remaining sugar.
Add the yolks to the orange and almond mass first, mix it gently with a spatula. Then add the whipped whites and mix it again.
Place the batter in a mold greased with some butter and bake it in a preheated 175 ºC oven for an hour. Check the readiness with a toothpick.
Take the baked cake out of the oven, let it cool slightly, remove the mold, and cool it down completely.
