Ingredients

For the dough:

  • 1 egg (s)
  • 100 ml milk
  • 1 teaspoon, leveled salt
  • 1 pinch (s) pepper
  • 3 tablespoon flour, heaped
  • Basil, chopped or dried

For covering:

  • 1 tomato (s) or other vegetable
  • possibly herbal cream cheese
  • 1 tablespoon oil

Instructions

  1. Separate one egg and add 100-150 ml of milk to the yolk. Then add salt, pepper and basil. Now beat the egg white until stiff and fold in carefully so that a fluffy dough is formed. At the end let the flour trickle in using a sieve and stir again carefully. The batter should now be airy and a little stiffer than a pancake batter. Sometimes the amount of flour and milk varies a little (different sizes of eggs).
  2. Now put 1 tablespoon of oil in the pan, let it get hot and then carefully distribute the dough in the pan with the spoon, as it will not run by itself. Bake until golden brown on both sides and finally garnish the omelette with tomatoes (if you like).
  3. If you want, you can also coat the omelette with herbal cream cheese and then spread the tomatoes on top. Also tastes very tasty with other vegetables (peppers, steamed zucchini, etc.).
