Ingredients

  • 4 egg whites
  • 5 egg yolks
  • 120 g fir honey or forest honey
  • 300 g cream
  • 100 g oat cream cheese
  • 2 cl kirsch
  • 1 pinch (s) salt
  • Icing sugar for sweetening and garnishing
  • 200 g blackberries, raspberries or currants. to taste
  • some liqueur for the fruit sauce, e.g., Cranberry liqueur
  • vanilla
  • lemon juice

Instructions

  1. Beat the egg whites with the salt until stiff. Beat the egg yolks with honey in a water bath to a very creamy mass, this takes a little time, the mass should be very thick. Then beat in the ice water again until cold. Mix the whipped cream with the goat cheese and carefully fold in the egg foam mixture. Pour in the kirsch and gradually fold in the egg whites. Pour into pre-chilled molds and freeze.
  2. Leave in the freezer for at least 4 hours and put in the refrigerator about 30 minutes before serving.
  3. For the berry sauce, puree the berries, strain them through a sieve, season to taste with vanilla, lemon, sugar and a little liqueur.
  4. Turn the parfait out of the mold and serve with the sauce.
