Bring water to a boil in a saucepan. Put the fish in boiling water and immediately remove the pan from the stove, leave the fish in the water for 5 minutes.
Remove fish from the pan, transfer to a plate, set aside to cool. Peel the cooled fish, remove the bones.
Heat the olive oil in a large skillet, add the onions, and fry, stirring occasionally, until tender.
Put the fish in the pan, add the French fries, stir, and then pour the eggs over everything, cook, stirring occasionally, for 3-4 minutes. Serve the dish with olives sprinkled with parsley.
