French Fries with Fish, Eggs and Onions

Salted salmon, French fries, onions, and eggs are cooked in the same pan and served with black olives.
Ingredients
- Salted salmon (soaked) – 400 g
- Olive oil – 50 g (1/4 cup)
- Green onions (finely chopped) – 3 pcs.
- Potatoes (deep-fried) – 500 g
- Eggs (slightly beaten) – 8 pcs.
- Parsley (finely chopped) – 1 bunch
- Black olives – 12 pcs.
Directions
- Bring water to a boil in a saucepan. Put the fish in boiling water and immediately remove the pan from the stove, leave the fish in the water for 5 minutes.
- Remove fish from the pan, transfer to a plate, set aside to cool. Peel the cooled fish, remove the bones.
- Heat the olive oil in a large skillet, add the onions, and fry, stirring occasionally, until tender.
- Put the fish in the pan, add the French fries, stir, and then pour the eggs over everything, cook, stirring occasionally, for 3-4 minutes. Serve the dish with olives sprinkled with parsley.
