Ingredients

  • 1 small Head cauliflower (400 g)
  • 1 tablespoon oil for frying
  • 50 g diced ham, lean
  • 4 egg (s), size M
  • Salt and pepper from the mill
  • 1 pinch paprika powder, smoked
  • 1 tablespoon parsley, cut into strips

Instructions

  1. Clean and wash the cauliflower and cut into small florets, cook in salted water until al dente.
  2. Heat the oil in a non-stick pan, fry the cauliflower florets and diced ham in it for about 5 minutes, turning.
  3. In the meantime, whisk the eggs and season with salt, pepper and paprika. Pour the eggs over the cauliflower florets and immediately turn them carefully. As soon as the egg is set, remove it from the heat and sprinkle with parsley, serve.
