Bright and appetizing breakfast, one appearance of which will make up for the lack of the sun outside the window – fried eggs in a pumpkin ring. It won’t take much more time, because it’s not so difficult to cut off a couple of thin circles from the pumpkin, make rings out of them and fry in a pan with the addition of spices. And then – the usual thing: fry the usually fried eggs, but inside a pumpkin ring! Fragrant and colorful!

Ingredients
Nutmeg pumpkin – 250 g (2 circles 1.5 cm wide)
Small eggs (category C2) – 2 pcs.
Salt – 2 pinches
Ground black pepper – to taste
Ground nutmeg – on the tip of a teaspoon
Dried French herbs – 0.25 teaspoon
Olive or butter oil – 15 g
Parsley – 1 sprig
Directions
Cut off a couple of pumpkin circles about 2 cm thick. Cut off the peel from the pumpkin slices, remove the middle using a 5 cm diameter cutting. I cut the hearts out of the middle using a cookie cutter, but you can leave the circles and also fry them and serve with the fried eggs.
Preheat a frying pan with oil and put a pumpkin ring there (or two at once, if the dia of the frying pan allows). Next, we lay out hearts or pumpkin circles. Cover and fry over medium heat for 3 minutes. The pumpkin should be soft and easy to pierce with a knife. The time depends on the thickness of the ring and the type of pumpkin. When the pumpkin is slightly browned and soft, turn over and fry for another minute. Sprinkle the pumpkin with salt, black pepper, and nutmeg.
We carefully drive the egg into the hole, being careful not to damage the integrity of the yolk. I correct the yolk with the shell so that it is located in the center. Sprinkle the egg white with salt. Fry the ovary in a pumpkin ring, uncovered, until the white grabs (the yolk should remain liquid). This will take about 3-4 minutes. If you are used to frying fried eggs under a lid, then this option is also possible, but it should be noted that the bright yolk will then be covered with a white film. Using a wide spatula, transfer the finished pumpkin eggs to a plate. Thus, we fry one more scrambled eggs.
Sprinkle the white of the eggs with dried herbs, and the yolk with salt (we did not salt it when frying). Decorate the eggs with parsley (chopped or leaves).
Serve fried eggs in a pumpkin ring with toast or fresh bread – at your discretion. And don’t forget to make tea or coffee – no morning is good without them!) Bon Appetit!
