Ingredients
Egg – 1 pc.
Bulb onions (large) – 1 pc.
Sugar – 1 tbsp
Salt – 1 pinch
Vegetable oil (for frying) – 1-2 tbsp
Fresh parsley (for serving) – 2 sprigs

Peel the onion, cut into slices 1-1.5 cm thick. Divide the sliced onion circles into rings. We do not separate the largest two rings in diameter, we leave them together so that they are not deformed and retain their shape. This is important because in this “double ring” we will be frying eggs.
Heat the vegetable oil in a frying pan and put all the onion rings in it. Sprinkle sugar on the onion rings. Cover with a lid and fry the onions over low heat for about 2-3 minutes on each side. A caramel “crust” should appear on the onion rings.
Gently break the egg into a cup. Pour the raw egg of the largest “double” onion ring out of the cup. Salt the egg to taste and cover. Fry eggs in onion rings for about a couple of minutes. As soon as the protein “grabs”, the eggs are ready. If it takes longer to cook, the yolk will not turn out runny. Rinse the parsley and chop finely.
The original scrambled eggs in sweet onion rings are ready. Sprinkle the eggs with finely chopped herbs and serve. Bon Appetit!
