Fried Eggs with Vegetables and Cheese (in the Oven)

Oven-baked scrambled eggs with tomatoes, bell peppers, and mozzarella cheese are an interesting and appetizing dish that is perfect for breakfast. Juicy vegetables, delicate cheese, and greens go well with an egg. Such a hearty and original breakfast will certainly delight your loved ones.

Ingredients
Eggs – 6 pcs.
Bulgarian pepper – ½ pc.
Tomatoes – 1-2 pcs.
Mozzarella cheese – 50 g
Fresh parsley – 2 sprigs
Fresh dill – 2 branches
Salt to taste
Ground black pepper – to taste
Directions
We need muffin tins (6 pieces). I will be using silicone molds. We turn on the oven to heat up to 180 degrees. Peel the bell pepper and cut it into small cubes.
Cut the tomatoes into cubes. Cut the mozzarella into cubes. Grind the greens.
If using muffin molds, brush with vegetable oil or butter. Silicone molds do not need to be lubricated. Put sweet peppers and tomatoes at the bottom of the molds. Salt and pepper a little. Then put the pieces of mozzarella and herbs.
Gently drive one egg into each mold. It is advisable to first cover the contents of the molds with protein, and put whole yolks on top. But this is only a matter of aesthetics, it does not affect the taste of the dish. Salt and pepper the eggs. Cook scrambled eggs in the oven at 180 degrees for 25-30 minutes. Let the cooked eggs with vegetables and cheese cool slightly.
Remove the eggs from the molds or serve directly into them. Enjoy your meal!
