Fried Fish in Batter with Lemon Mayonnaise

We make mayonnaise ourselves – it’s very simple, tasty, and natural. For batter (a batter) we use carbonated water. You can also have a beer. This makes the dough dark golden and crunchy when fried.

Ingredients

  • Large egg – 1 pc.
  • Yolk – 1 pc.
  • Zest and juice of 1 lemon
  • Olive oil – 1 glass
  • Salt pepper
  • Flour – 1 ¼ cup
  • Baking soda – 1 teaspoon.
  • Paprika – 1 teaspoon
  • Carbonated water (soda), cold – 2/3 cup
  • Olive oil – 1 glass
  • White fish fillet (skinless and boneless), cut into 1 cm strips – 300 g

How to cook fried fish in batter with lemon mayonnaise:

Directions

  1. In a food processor, combine the egg, yolk, lemon juice, and zest (stir until pale yellow). Add a few drops of oil, stir. Then, pour the remaining oil in a thin stream to make the mixture emulsion. Season with salt and pepper to taste. Place the mayonnaise in a bowl and refrigerate.
  2. Prepare the batter and soda. Combine flour, baking soda, paprika, and soda. Add salt and pepper and stir until smooth. Heat the oil in a cauldron (or in a deep frying pan) over high heat (up to 200 degrees, if there is a special thermo). The oil should be very hot, but not smoke.
  3. Dip the fish pieces (one at a time) into the batter and dip them into the hot oil. Fry in portions, 2-3 minutes each, turning, until dark golden brown. Remove the fried fish from the butter with a slotted spoon and place on a paper towel to absorb excess fat. Sprinkle a little salt on the fried fish in batter and serve with lemon mayonnaise.
