Ingredients

  • 250 g cheese, (halloumi)
  • 1 handful rocket
  • 8 cocktail tomatoes
  • 2 tablespoon lime juice, (or lemon)
  • 4 tablespoon olive oil
  • 1 clove garlic
  • salt and pepper
  • honey

Instructions

  1. Mix half of the olive oil and lime juice, squeeze the garlic and season the marinade with salt, pepper and honey.
  2. Wash and halve the tomatoes, sort the rocket, wash and drain. Shorten the stems or remove them entirely.
  3. Cut the halloumi into approx. 1 cm thick slices and fry them in the remaining olive oil on both sides in a pan for about a minute, then remove from the pan and add the tomato halves. Fry for about 1-2 minutes, stirring, so that the tomatoes begin to melt.
  4. Arrange a nest of rocket on two plates, drape the halloumi on top and cover with the tomato halves. Drizzle everything with the marinade and serve immediately.
  5. We also have crispy flat bread and a fruity red wine.
