Ingredients

  • 250 g roe, fresh or salted herrin
  • 20 g flour
  • 50 g butter, or mararine, or oil
  • salt and pepper
  • Lemon juice

Instructions

  1. Use fresh roe if possible. Soak the salted roe overnight.
  2. Carefully wash the roe in fresh water, remove skins and other adhesions. Pat dry, season with salt and pepper. Turn in flour and fry in the fat over medium heat. Possibly season with a little lemon juice.
  3. You can also prepare the herring milk.
  4. Serve with toast.
