Fried Omelet with Sausage, Tomatoes, and Cheese

Tasty, satisfying, and nutritious omelet with sausage, tomatoes, and cheese with a bright yolk – we will make the familiar fried eggs not only appetizing but also original and colorful!

Ingredients

  • Eggs – 2-3 pcs.
  • Sour cream – 3 tbsp
  • Tomatoes – 2 pcs.
  • Boiled sausage – 100 g
  • Hard cheese – 50 g
  • Green onions – 30 g
  • Fresh parsley – 10 g
  • Soda – 1/4 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (for frying) – 20 ml

Directions

  1. Cut the sausage into cubes and fry in a pan with heated vegetable oil for about a couple of minutes.
    Cut the tomatoes into arbitrary pieces, add to the pan with sausage and stirring, continue to fry for another 1-2 minutes.
  2. We break the eggs into a bowl. We separate one-yolk carefully, trying not to damage it, into another container and set it aside. Add sour cream, salt, ground pepper, and soda to the eggs.
    We leave a little green onion for serving the omelet. Finely chop the rest of the green onions and parsley and add to the egg mixture. Mix well.
  3. Fill the sausage with tomatoes with the omelet mixture and cook, covered, until the eggs set.
    Then add the egg yolk to the center of the omelet.
  4. Sprinkle the omelet with grated cheese. Cover the frying pan with a lid and cook the fried omelet for a minute or a half, until the cheese melts.
  5. Sprinkle the finished fried omelet with finely chopped green onions and serve.
