Instructions

  1. Cut the boiled potatoes from the previous day into thin slices and fry them in butter and oil until crispy. Only add the onion cubes after a few minutes (do not add from the beginning, they will turn black very quickly). When the potatoes are crispy enough (everyone likes them differently, so no time is given), season with salt and pepper.
  2. Whisk the eggs with a dash of milk and a little salt and pour over the fried potatoes. Turn again and again so that the egg mixture is evenly distributed and the egg freezes.
  3. I have not given any exact quantities, as this is a typical use of leftover boiled potatoes from Sunday and depending on how many potatoes are left, it depends on the amount of onions and eggs.
  4. You can also add peppers and / or diced tomatoes, they also taste very good.
  5. We always serve canned beetroot or a green salad.
