Ingredients

  • 8 small sardines
  • 1 bunch parsley, smooth
  • 0.5 ½ lemon (n)
  • 3 tablespoon olive oil
  • 2 cloves garlic
  • 1 teaspoon flour
  • sea-salt
  • Black pepper

Instructions

  1. Finely chop the flat-leaf parsley and garlic and mix. Squeeze half a lemon.
  2. Cut off the heads of the sardines, slit open the belly and remove the innards. Rinse well and pat dry inside and outside with kitchen paper, possibly flake beforehand, but this is usually not necessary. Then carefully rub the sardines with a mixture of ground sea salt and black pepper and sprinkle with a little sifted flour.
  3. Heat the pan with olive oil to a relatively high temperature and fry the sardines for approx. 2-3 minutes on each side. Place the sardines on a preheated platter.
  4. Throw away the old oil and add new olive oil to the pan, add the parsley and garlic mixture and let it sear slightly. Deglaze with the lemon juice and pour over the fried sardines.
  5. Serve with bread and / or small, lightly fried jacket potatoes. A strong, slightly chilled red wine or a strong rosé goes well with it.
