Fried Shrimp with Coconut

Crispy fried shrimps breaded with grated coconut, with lime zest. An original dish in oriental style.

Ingredients

  • Large (king) raw shrimps – 7 pcs.
  • Grated coconut – 1 pc.
  • Panko (Japanese bread crumbs) – 20 g
  • Lime zest – 1 tbsp
  • Egg white – 1 pc.
  • Curry – 1 tbsp
  • Rice vinegar – 50 g
  • Japanese dashi broth (for example, from ready-made dry concentrate) – 150-200 g
  • Soy sauce – 75 g
  • Vegetable oil
  • Sugar
  • Salt

Directions

  1. Heat the dasha broth in a wok. Pour in vinegar.
  2. Add soy sauce. Add sugar. Stir and remove sauce from heat.
  3. Peel the shrimp, leaving the tails.
  4. For breading, mix coconut and crackers.
  5. Add curry, zest, and salt.
  6. Mix.
  7. Beat the protein with a fork.
  8. Dip the shrimp in the protein.
  9. Roll in breading.
  10. Heat the vegetable oil in a wok put the shrimps and fry them on both sides until golden brown.
  11. Put the finished shrimps on a paper towel.
  12. Serve with cooked sauce.
