Fried Zucchini Appetizer with Tomatoes and Cheese

An appetizer made from fried zucchini prepared according to this recipe is quite worthy of a festive table. Despite the fact that all the ingredients are simple and difficult to prepare even for a novice housewife, the appetizer from fried zucchini with tomatoes and cheese turns out to be delicious, looks bright and impressive!

Ingredients

  • Zucchini (medium size) – 1 pc. (400 g)
  • Tomatoes (small size) – 2 pcs.
  • Hard cheese – 80 g
  • Garlic – 1 clove
  • Fresh dill – to taste
  • Mayonnaise – 1 tbsp
  • Sunflower oil – 60 ml
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all the ingredients you need to make your tomato and cheese fried courgette snack.
  2. Wash the young zucchini, cut off the edges. Cut the zucchini into slices up to 1 cm thick.
  3. Season the squash with salt and pepper.
  4. Heat the sunflower oil in a skillet. Over medium heat, fry the zucchini slices on it until light crust on both sides, 5 minutes on each side.
  5. Transfer the fried zucchini to a napkin, and in the meantime, fry the next batch. Fry all the courgette slices in this way.
  6. Place the fried zucchini on a plate in a single layer and leave to cool while the filling is cooking.
  7. Cooking the filling. Grate hard cheese on a coarse grater.
  8. Wash the tomatoes, remove the stalks. Cut the tomatoes into small cubes. Drain the released juice, and add the chopped tomatoes to the cheese.
  9. Rinse the dill, dry and chop. Leave a little dill to decorate the dish, add the rest of the dill to the cheese and tomatoes.
  10. Peel the garlic and pass through a press or chop with a knife. Add garlic to tomatoes with cheese and herbs.
  11. Season the combined ingredients with mayonnaise, add a little salt and pepper.Toss the filling of cheese, tomato, dill and garlic.
  12. Now spread the resulting filling into the slices of fried courgette. Place the grilled zucchini appetizer with tomatoes and cheese in the refrigerator for 1 hour.
  13. Sprinkle the remaining dill on the zucchini appetizer when serving.
  14. Zucchini appetizer with tomatoes and cheese ready to serve.
