Ingredients

  • 400 g potato (s), boiled
  • 1 small bell pepper (s)
  • 1 onion (s)
  • 4 egg (s)
  • 50 g bacon
  • 100 g cheese, Gouda
  • liter ⅛ milk or cream
  • 1 pinch (s) cayenne pepper
  • pepper
  • nutmeg
  • salt
  • in Chives, rolls

Instructions

  1. Cut the boiled potatoes into small cubes. Wash and quarter the peppers and remove the inner skins with the seeds. Cut the bell pepper into small strips, peel and finely chop the onion. Cut the bacon into cubes and leave in a pan. Sauté the onion and bell pepper for 5 minutes. Add potatoes and fry briefly on all sides. Whisk eggs and milk (or cream) together,
  2. Stir in the grated cheese. Season well with pepper, nutmeg, salt and cayenne pepper. Pour this mixture over the potatoes in the pan. Cover and let stand on low heat.
  3. Sprinkle with chives rolls before serving.
