Frozen Strawberry Candies

Delicious homemade candy can be made with just a few ingredients! Airy, like a cloud, aromatic candies from frozen strawberries are a vivid example of this. Whipping berries with gelatin, lemon juice, and sugar gives the dessert the consistency of an airy mousse, which after cooling becomes elastic, like jelly.

Ingredients

  • Frozen strawberries – 420 g
  • Sugar – 300 g
  • Instant gelatin – 40 g
  • Lemon (juice) – 110 g (50 ml)
  • Coconut flakes – 30-40 g
  • Sunflower oil – 0.5-1 teaspoon (for greasing the mold)

Directions

  1. Prepare ingredients according to the list.
  2. Defrost the strawberries, retaining all the juice that has come out. Add sugar to the strawberries.
  3. Grind the berries with sugar until smooth and smooth. You can use a hand blender.
  4. Transfer the fruit puree to a saucepan or small saucepan.
    Squeeze the juice out of the lemon. I got 50 ml of juice.
    Add gelatin and lemon juice to the fruit puree.
  5. Over low heat, stirring constantly, heat the mixture for 3-5 minutes to dissolve the gelatin and sugar. As soon as the mixture starts to boil, immediately turn off the heat.
  6. Pour the berry mass into a deep bowl and cool to a temperature of 30-35 degrees. Without a thermo, you can make sure that the mass has cooled down enough by dropping a drop of the berry mass on the back of your hand. If the drop is not hotter than your skin, its temperature is about 36 degrees.
  7. Beat the warm berry mixture with a mixer at low or medium speed for 8 minutes, and then another 2-4 minutes, increasing the speed to maximum. During whipping, the mixture should increase in volume at least 2 times and lighten.
  8. To make it easy to remove the berry mass after cooling, line the mold in which you will cool the dessert with parchment paper. Brush the paper with a thin layer of sunflower oil and sprinkle with coconut. I used a 32×22 cm mold.
  9. Pour the whipped berry mass into the prepared mold and place in the refrigerator for 3 hours to cool and completely freeze.
  10. Then remove the dessert from the mold and use a sharp knife to cut into portions of the desired size. To make the cut as smooth as possible, pre-rinse the knife blade with hot water. The candies can be served directly or folded into an airtight container and placed in the refrigerator before serving.
  11. Frozen strawberry candies are ready! Sprinkle a pinch of coconut on the sweets if desired and serve the dessert to the table. Bon Appetit!
