Ingredients

  • 4 leaves Chinese cabbage
  • 1 head radicchio, small
  • 1 red pepper (s)
  • 2 carrot (s)
  • 1 apple, red-skinned
  • some lemon juice
  • 4 slices pineapple, fresh

For the dressing:

  • 2 tablespoon balsamic vinegar, white
  • 1 tablespoon vegetable stock, cold
  • 1 teaspoon mustard, medium hot
  • 1 teaspoon maple syrup or honey
  • salt and pepper
  • 3 tablespoon olive oil or neutral oil

Instructions

  1. Wash and dry the Chinese cabbage and radicchio and cut or pluck into bite-sized pieces. Remove the seeds from the pepper and dice the pulp. Peel the carrots, cut into strips or roughly grate. Quarter the apple, remove the core, cut the quarters into pieces and immediately drizzle with lemon juice. Peel the pineapple, remove the hard stalk and dice the rest.
  2. For the dressing, mix together balsamic vinegar, broth, mustard, maple syrup, salt and pepper. Beat the oil under it.
  3. Pour the dressing over the salad, mix and season to taste.
