Ingredients
- 150 g rocket
- 200 g mozzarella
- 1 medium avocado (s)
- 1 medium mango (s)
- 8 small cocktail tomatoes
- 1 large red pepper (s)
- 15 g pine nuts, roasted or other round kernels
- 2 tablespoon white wine vinegar
- 2 tablespoon honey
- 5 tablespoon olive oil, or walnut oil
- 5 tablespoon water
- Salt and pepper, from the mill

- Wash the rocket and cut it a little smaller. It is best to distribute it on a large, flat plate. Then wash, clean and bite-size all other ingredients and spread on the rocket. Mix white wine vinegar, honey, oil, water, pepper and salt, season to taste and spread over the top.
