- 1 bunch parsley
- 10 tablespoon olive oil
- 5 tablespoon apple cider vinegar
- salt and pepper

- Dice the tomatoes not too small and dice the ginger very finely. Chop the parsley. Mix all ingredients well with the olive oil and apple cider vinegar. Season with salt and pepper and let the salad stand for about 30 minutes.
