Ingredients

  • 1 kg game meat, e.g., Wild boar or fallow deer (cut into goulash)
  • 1 clove garlic
  • 2 large onions
  • 1 packet soup vegetables (leek, carrots, celery)
  • 1 tablespoon mustard
  • 3 tablespoon tomato paste
  • 1 dash Tabasco
  • salt and pepper
  • 250 ml red wine
  • 500 ml game stock
  • olive oil

Instructions

  1. Sear the meat in olive oil. Add the chopped onions, soup vegetables and garlic and fry briefly, season with salt, pepper and Tabasco, add the mustard and tomato paste and roast briefly. Then deglaze with red wine and let it reduce.
  2. Add the game stock, cover and simmer until the meat is soft, then simmer uncovered to the desired consistency, season again before serving.
