Ingredients

  • 500 g spahetti
  • 20 cocktail tomatoes
  • 6 clove (s) garlic, more or less as desired
  • 400 g kin prawns, frozen, without tail
  • 150 ml olive oil
  • 150 ml vegetable stock
  • Herbs, Italian
  • Peperoncini
  • 150 g rocket
  • Parmesan, grated

Instructions

  1. Cook the spaghetti according to the instructions on the packet. Halve the tomatoes. Peel the garlic and cut into fine slices.
  2. First fry the garlic briefly in a deep pan in hot oil (the garlic should not get any color) and then add the frozen prawns and fry them. Add the broth and simmer briefly. But not for too long, otherwise the prawns will be mushy and should remain firm to the bite. The herbs and possibly peperoncini or similar. (if you like it spicier) add. Briefly fold in the tomatoes. Then add the drained spaghetti and mix everything well. Fold in 3/4 of the rocket already in the pan.
  3. Arrange everything on plates and garnish with grated parmesan and rocket.
