Gata with Nut Filling

Gata is an Armenian pastry, one of the variants of which is cookies in the form of shortcrust pastry rolls on yogurt, kefir or sour cream. The dough can be different, but the filling for the Armenian gata is always a sand crumb called “khoriz”. This time we make a very tasty gata stuffed with sand crumbs and nuts.

Cook: 1 hour 30 minutes

Ingredients

For the dough:

  • Butter – 200 g
  • Sour cream 20% – 200 ml
  • Flour – 500 g
  • Soda – 0.5 teaspoon
  • Salt – 1 pinch
  • Egg (for greasing the dough) – 1 pc.

For filling:

  • Butter – 50 g
  • Sugar – 150 g
  • Flour – 170 g
  • Nuts (walnuts or others) – 50 g

Directions

  1. We prepare the necessary ingredients. The butter should be soft, but not completely melted. You can take any nuts – I have walnuts.
  2. Sift flour into a bowl (500 g is a little more than 3 full glasses of 250 ml). Add salt and soda. Mix.
  3. Add soft butter. Rub butter and flour into crumbs with your hands.
  4. Add sour cream.
  5. Knead shortcrust pastry and put together. You don’t need to knead for a long time. Put the dough in the refrigerator for 30 minutes.
  6. To prepare the filling, mix flour (170 g – a little more than a glass of 250 ml) with sugar.
  7. Add oil.
  8. Rub into small crumbs with your hands. Take one tablespoon of sand crumbs for sprinkling gata.
  9. Grind the nuts with a rolling pin or blender.
  10. Divide the egg into yolk and white. Add 1 teaspoon of water to the yolk and egg whites and beat lightly.
  11. Divide the dough into two parts for convenience.
  12. Roll one part of the dough into a layer about 30×40 cm in size.
  13. Brush with egg white.
  14. Spread half of the sand crumbs on the rolled dough evenly.
  15. Spread half of the nuts evenly on the sand crumbs.
  16. Roll the filled dough into a roll. Flatten it slightly.
    Brush with yolk on top.
  17. Cut the roll obliquely into roll pieces.
    In the same way, make cookies from the remaining half of the dough and the filling.
  18. Cover the baking sheet with baking paper.
    Place the cookies on a baking sheet. Sprinkle on top with the sand crumbs that were left for this earlier.
    Bake shortbread cookies on sour cream in a preheated oven at 180 degrees for about 30 minutes.

Delicious gata biscuits with nut filling can be served with tea.
