Ingredients

  • 125 g chocolate, 70% cocoa content
  • 3 tablespoon vanilla sugar
  • 3 tablespoon orange liqueur
  • 5 egg (s)
  • 120 g suar
  • 200 g butter, soft
  • 200 g almonds, round
  • 50 g flour, sifted
  • 1 teaspoon Baking powder

For the glaze:

  • 150 g dark chocolate couverture
  • 3 tablespoon orange liqueur
  • 3 tablespoon heavy cream

Also:

  • Butter for the mold

Instructions

  1. Melt the chocolate with the liqueur and the butter very carefully, add the vanilla sugar and mix very well.
  2. Separate the eggs, beat the egg yolks with the sugar until frothy, process the egg white into egg whites.
  3. Add the egg yolk mixture to the slightly cooled chocolate mixture and mix well, then carefully fold in the egg whites. Add the almonds, baking powder and flour, mix everything well again.
  4. Grease a springform pan with a maximum dia of 26 cm or 24 cm well with butter and pour in the mixture. Bake at 180 degrees on the middle rack for 40 minutes.
  5. Let cool a little and remove the ring.
  6. Melt the couverture with the liqueur and the cream, coat the cake with it and let it set.
  7. Tip: the better the quality of the chocolate, the better the cake will taste. You shouldn`t save here, on the contrary.
  8. The cake makes eight neat pieces, e.g., as a dessert of a menu.
