German Pretzels Ingredients

  • Flour – 500 g
  • Warm water – 200 ml
  • Pressed yeast – 20 g
  • Butter (room temperature) – 2 tablespoons
  • Sugar – 1 teaspoon
  • Salt – 0.5 teaspoon
  • Soda – 1 teaspoon
  • Coarse salt for sprinkling (optional)

  1. Pour warm (35-40 degrees) water into a deep bowl, add sugar and yeast. We leave for 5 minutes.
  2. Pour the required amount of sifted flour into a bowl, add salt and soft butter.
  3. Knead a homogeneous dough. (The yeast dough for this recipe does not require lengthy proofing.)
  4. Divide the dough into 12-15 pieces. Stretch each part into a rope (approximately 40 cm long) with thinner edges.
  5. Form a pretzel, leave for 15-20 minutes.
  6. Pour 1 liter of water into a saucepan and add 1 teaspoon. baking soda. We are waiting for the solution to boil. Remove the pan from the heat and dip each pretzel in hot water for 30 seconds. We take out the pretzels from the water with a slotted spoon (not aluminum!).
  7. We spread the pretzels on a baking sheet covered with foil or parchment, leave warm for 25-30 minutes.
  8. Then we send the German pretzels to the oven, preheated to 200 degrees, for 20-27 minutes. Sprinkle hot pretzels with water and sprinkle with coarse salt (if desired).
  9. We serve German pretzels with soup, tea, beer, etc.
