Ingredients

  • 500 g beans, lare white, dried
  • 1 bunch soup greens
  • 1 can (s) tomato (s), peeled
  • 0.5 liter ½ meat broth or vegetable broth
  • 2 cloves garlic
  • 0.5 ½ cup oil (olive oil)
  • 2 onions)
  • salt and pepper
  • oregano
  • sugar

Instructions

  1. Soak the beans in water overnight (a pinch of baking soda in the soaking water makes the beans more digestible) Dice the soup greens, chop the onions and garlic, puree the tomatoes. Sweat the onions and garlic in olive oil, add the soup greens, mashed tomatoes and meat broth. Simmer in a closed pot for approx. 1 1/2 hours until the beans are cooked through. If there is too much liquid in the pot then boil down a little in the open pot until a thick tomato sauce is formed.
  2. Season to taste with salt, pepper, a pinch of sugar and oregano. Tastes good lukewarm as a starter or as a main course, e.g. with rice.
