Ingredients

  • 500 g nocchi
  • 500 g minced meat
  • 500 g sweet potato (s)
  • 200 g cherry tomato (s)
  • 1 onion (s)
  • 1 clove garlic
  • 150 g oat cream cheese
  • 0.5 ½ bunch leaf parsley
  • 1 tablespoon tomato paste
  • 1 teaspoon harissa paste
  • 250 ml water
  • 200 g sour cream
  • salt and pepper
  • Oil for frying

Instructions

  1. Peel the sweet potatoes and cut into approx. 2 cm cubes. Heat 2 tablespoons of oil in a very large pan and fry the potato cubes all around for 8-10 minutes over medium heat. Season the sweet potatoes with salt. In the meantime, wash the tomatoes and cut them in half. Peel and finely chop the onion and garlic, wash the parsley, shake dry and roughly chop. Cut the goat cheese into flakes. Remove the potato cubes from the pan and set aside. Heat 2 tablespoons of oil in the hot frying fat and fry the minced meat in it until it is crumbly. Add the onion, garlic and gnocchi and cook for about 2 minutes. Add the tomato paste, harissa and tomatoes and sauté briefly. Season the gnocchi with salt and pepper. Stir in the water and sour cream and bring to the boil. Fold in the potatoes again and heat again briefly. Serve the gnocchi sprinkled with the goat cheese and parsley.
