Ingredients

  • 500 g nocchi, ready-made or homemade
  • 2 handfuls rocket
  • 10 olives, black
  • 250 g cherry tomato (s)
  • 125 g buffalo mozzarella
  • 1 tablespoon mustard, medium hot
  • 10 tablespoon balsamic vinegar, light or dark
  • some stalks basil
  • some salt and pepper
  • 1 dash olive oil

Instructions

  1. Clean and wash the rocket. Wash the cherry tomatoes and cut in half. Cut the olives into rings and the mozzarella into cubes. Put everything in a bowl. Meanwhile cook the gnocchi according to the instructions on the packet and add them. Mix a dressing of mustard, balsamic vinegar, salt, pepper and olive oil and pour over the ingredients. Mix everything well and season to taste again. Now arrange on plates and garnish with chopped, fresh basil. The salad tastes best lukewarm. As a side dish or starter, this portion is enough for 4 people. As a main course for 2.
