Ingredients

  • 500 g potato (s)
  • 1 onion (s)
  • 4 egg (s), hard-boiled
  • 1 bunch chives
  • 500 ml milk 3.5%
  • 1 tablespoon brandy vinegar
  • 3 tablespoon sunflower oil
  • some salt and pepper

Instructions

  1. Peel and slice the potatoes. Peel and dice the onion.
  2. Sweat the onions in a saucepan with 1 tablespoon oil until translucent. Then put the potato slices in the pot and cover lightly with water. Put a pinch of salt in the saucepan. Simmer over medium heat until the potatoes are cooked through.
  3. Meanwhile, peel the hard-boiled eggs. If you have two eggs, carefully remove the yolks and cut the rest of the egg into cubes. Likewise, cut the other two eggs completely into small pieces.
  4. In a large bowl, mash the two hard-boiled egg yolks with 2 tablespoons of neutral oil and 1 tablespoon of brandy vinegar. Put the remaining eggs in the bowl as well. Cut the chives into the bowl with scissors. Season with salt and pepper. Then add the cold milk to the bowl and stir everything well. Season again with salt and pepper.
  5. When done, serve the potatoes on deep plates with a skimmer. Then pour the cold chives sauce over it.
