A light and juicy vegetable salad with feta cheese, known to everyone as “Greek”, can be made much more satisfying if you add pasta to the ingredients. Greek pasta salad looks very unusual and original. Hurry up to top up your recipe box with this simple salad!
Ingredients
Pasta (raw) – 100 g
Tomato – 1 pc.
Fresh cucumber – 1 pc.
Sweet red pepper – 60 g
Shallots (small size) – 1 pc.
or red onion (medium size) – 0.5 pcs.
Pitted olives – 60 g
Feta cheese – 60 g
Olive oil – 2 tbsp
Dried oregano – 0.5 teaspoon
Salt to taste
Directions
Prepare all the ingredients you need to make your Greek pasta salad. Choose shallots or red onions when choosing onions. If the listed types of onions are not at hand, take regular onions. Choose pasta from durum wheat. In order for the salad to look original, take pasta of some fancy, unusual shape, for example, spiral.
Dip the pasta in boiling salted water (750 ml) and boil until cooked according to the instructions on the package. Throw the cooked pasta in a colander, rinse with a little warm water and leave to cool.
Wash the tomato, remove the stalk. Cut the tomato into wedges or cubes.
Remove the peel from the cucumber or just wash thoroughly, cut off the edges. Cut the cucumber into cubes.
Peel the onion and cut into the smallest possible cubes.
Peel sweet red pepper from seeds, cut the pulp into squares.
Combine tomato, cucumber, onion, bell peppers, and whole pitted olives in a salad bowl. Olives can be pre-pressed slightly with the flat side of a knife.
Add cooled pasta to a salad bowl.
Pour in olive oil, add a pinch of salt, and half the dried oregano.
Toss the pasta salad.
Cut the feta cheese into cubes.
Spread the cubes of feta cheese over the top of the Greek pasta salad. If the salad is mixed with cheese, the appearance will be unaesthetic, since feta cheese is very soft and crumbles easily.
Drizzle olive oil over the salad and sprinkle with the remaining oregano.
You can serve Greek salad with pasta not only as an independent appetizer but also as a side dish for meat or fish.
