Ingredients

  • 400 g pasta (penne)
  • 2 small zucchini
  • 2 red pepper (s)
  • 16 olives, black
  • 6 tablespoon olive oil
  • 1 lemon (s), untreated, which juice and zest
  • 2 tablespoon parsley, chopped
  • Rosemary and thyme
  • 100 g sheep cheese
  • salt and pepper

Instructions

  1. Cook the noodles al dente. In the meantime, clean the vegetables, cut the courgette into thick slices, peel the peppers with the peeler and roughly dice.
  2. Heat 2 tablespoons of oil in a coated pan. Fry the vegetables for about 5-10 minutes. Mix the remaining oil with the lemon juice and zest, salt, pepper, parsley, rosemary and thyme.
  3. Carefully mix the drained pasta with the marinade and the fried vegetables, season again to taste. Garnish with olives and crumbled sheep`s cheese and serve lukewarm or cold.
  4. Tastes great as an accompaniment to grilled meat!
