Green Bean Lobio

Delicious vegetable dish made from asparagus beans. It can be a separate dish or a good side dish for meat.

Ingredients

  • Green beans – 400-500 g
  • Onion – 2 small heads
  • Tomatoes – 3-4 pcs. (400 g)
  • Sunflower oil – 4 tbsp
  • Young garlic – 1 head
  • Parsley and cilantro – 3-4 sprigs
  • Dry basil – 0.5 teaspoon
  • or a few sprigs of fresh
  • Ground black pepper – to taste
  • Salt to taste

Directions

  1. Vegetables for lobio from green beans. I did not take cilantro.
  2. Cut off the ends of the beans and cut the beans into 2.5-3 cm pieces. Boil the beans for 5-7 minutes in boiling water. Save 150ml of broth.
  3. Scald the tomatoes and peel them off. Cut the tomatoes into small cubes.
  4. Finely chop the onion. I also used a little green part of the onion. Lightly fry the onion in oil.
  5. Add beans, tomatoes and broth to the onion. Simmer vegetables over medium heat, stirring occasionally, for 10 minutes without a lid, then 3 minutes – over low heat under a lid.
  6. Chop the greens. Grind the garlic with salt.
  7. Add garlic, herbs and spices to the beans to the green beans lobio. Add salt and pepper to taste. Delicious in any form. Lobio recipe from green beans from the book “Cooking in Georgian”.
