Green Beans Baked in Tomato Sauce with Bell Pepper

This tender casserole is a great option for a light, meat-free dinner. Green beans, baked in tomato sauce seasoned with table mustard, taste more interesting. Red bell pepper makes the dish more aromatic and brighter. And adding grated cheese at the end of the bake gives it a complete look!

Ingredients
Fresh green beans – 400 g
Hard cheese – 100 g
Bulgarian red pepper – 190 g (1 pcs.)
Onions – 90 g
Tomato sauce – 240 g
Table mustard – 1 tbsp
Garlic – 1 clove
Salt – 1/2 teaspoon
Ground black pepper – 1-2 pinches
Butter (for frying) – 30 g
Fresh parsley (for serving) – 1-2 branches
Directions
Rinse the green beans, cut off the ends on both sides. Cut the beans into 2-3 pieces (about 3-4 cm long).
In a saucepan, bring the water to a boil, put the beans, and after boiling again, cook for 5 minutes over low heat.
Combine the tomato sauce in a deep bowl with the mustard, add salt and ground black pepper (take into account the salinity and pungency of the sauce itself!). Stir. Drain the beans. Add the tomato sauce to the beans and stir.
Place the beans and sauce in a baking dish and flatten (my dish is 27 cm in diameter, 4 cm high). Send the beans to an oven preheated to 180 degrees and bake for 20 minutes.
While the beans are in the oven, rinse the bell peppers, cut them lengthwise into two halves, and remove the partitions with the seeds. Cut the peppers into small cubes. Peel the onion, rinse and cut into small cubes. Peel and chop the garlic.
Heat butter in a skillet, add peppers, onions, and garlic. Stir in, fry over medium heat for about 5 minutes, until vegetables are slightly tender.
After 20 minutes, remove the mold from the oven. Arrange the fried vegetables in an even layer over the beans.
Grate the cheese on a coarse grater and spread evenly over the vegetables. Return the mold to the oven for a couple of minutes – the cheese should melt.
Green beans baked in tomato sauce with bell pepper are ready. Arrange the green beans on bowls and serve hot, garnished with fresh herbs.
