Ingredients

  • 600 g potato (s)
  • 1 large onion (s)
  • 1 clove garlic
  • 1 small Head savoy cabbage, (approx. 400 g)
  • 100 g sausae, (chorizo)
  • salt and pepper
  • 1 teaspoon vegetable stock, instant
  • olive oil

Instructions

  1. Peel the potatoes, onion and clove of garlic. Dice the potatoes, quarter the clove of garlic and place in a saucepan with the whole onion. Top up with water, lightly salt and cover and simmer the potatoes for 20 minutes. Fish out the onion and garlic and discard. Remove the potatoes from the cooking stock with a slotted spoon, place in a bowl and mash with a fork.
  2. Clean, wash and quarter the savoy cabbage. Cut out the stalk, cut the savoy cabbage into very fine strips and set aside. Remove the skin from the chorizo and cut the sausage into rings.
  3. Bring the potatoes to the boil and add the savoy cabbage strips and chorizo slices. Add the mashed potatoes. Season the soup with salt, pepper and vegetable stock, bring to the boil and simmer for about 5 minutes. Serve very hot and drizzled with a little olive oil.
