Ingredients

  • 200 g reen spelled, crushed
  • 250 ml water
  • 1 egg (s)
  • 2 carrot (s), grated (alternatively zucchini)
  • 50 g parmesan, freshly rated
  • salt and pepper
  • herbs Provence
  • possibly garlic
  • Clarified butter, for frying

Instructions

  1. Put the green spelled in a bowl and pour the boiling water over it, stir well and let it soak for at least 2 hours. I also do it in the evening and let it swell until the next morning.
  2. Add the egg and stir in, also the grated Parmesan and the raw, grated carrots, season well with the spices (feel free to try raw, i.e. unbaked, salt works wonders on the taste). Garlic can or does not have to be. With the herbs you can alternatively use thyme or fresh parsley, quantity according to taste. For my day children I usually take 1/2 teaspoon, for adults a little more. For the adult taste you can also add a little chilli very well or not too hot diced peppers.
  3. If the mass is too firm and therefore easily crumbly, you can add egg or increase the amount of water.
  4. Shape approx. 7-8 meatballs out of the mixture and fry them slowly on both sides in clarified butter, proceeding really slowly as they burn easily.
  5. A wholesome dwarf meal with a fresh tomato sauce or a garlic yoghurt sauce.
