Ingredients
- 50 g reen spelled, crushed
- 150 ml water
- 30 g flaxseed
- 400 g spelled flour, T 630
- 100 g rye flour, T 997
- 0.5 ½ cube yeast
- 0.5 teaspoon ½ sugar
- 2 tablespoon water, warm
- 180 ml soy drink, (spelled or oat)
- 2 tablespoon olive oil
- 10 g salt
- 50 g sunflower seeds
- 1 carrot (s), approx. 00 g
- seeds for sprinkling (linseed, sesame, sunflower, pumpkin seeds, flakes)

- Roast the green spelled meal over a low heat until it starts to smell. Bring to the boil with water, cover and simmer gently for 20 minutes. Take the pan off the stove and stir in the flaxseed.
- In the meantime, mix the yeast with 2 tablespoons of water and sugar, cover and let stand for approx. 15 minutes until it starts to foam.
- Warm the spelled drink slightly and knead with all the ingredients in the food processor (dough hook) for 5 minutes on a low level and briefly on the highest level.
- Cover and let the dough rise in a warm place for 30 minutes. Then knead again by hand, divide the dough into 10 portions (approx. 100 g) and form a round shape.
- Place on a baking sheet lined with baking paper and cover again for another 20 minutes. Cut the surface crosswise (if necessary brush with water and sprinkle with seeds).
- Bake in the preheated oven at O / U 240 ° on the middle shelf for 10 minutes, steaming. After 10 minutes, let off the steam and bake for another 15 minutes until golden brown.
