Ingredients

  • 1 kg minced meat, from beef
  • 4 tablespoon tomato paste
  • 2 medium onion (s), finely diced
  • 4 cloves garlic, pressed
  • 1 tablespoon salt
  • some pepper, freshly ground
  • Cayenne pepper
  • possibly ground cumin
  • 1 teaspoon paprika powder, hot pink
  • Parsley, smooth, chopped
  • 1 teaspoon paprika powder, noble sweet
  • some oil

Instructions

  1. Heat oil in a skillet over medium heat. Add the diced onions and sauté for about 5 minutes until softened. Transfer to a bowl and let cool for 5 minutes.
  2. In a large bowl, combine the cooled onions, minced meat, tomato paste, pressed garlic, salt, freshly ground pepper, cayenne pepper to taste, ground cumin (if using), both paprika powders, and chopped parsley. Mix until combined. Cover and refrigerate for at least 30 minutes, then taste and adjust seasoning if needed.
  3. If using wooden skewers, soak them in water for at least 20 minutes.
  4. Divide the meat mixture into 6 portions and shape each around a skewer to form a cylinder.
  5. Preheat the grill to high heat and brush the grate with oil.
  6. Grill the skewers for 10-15 minutes, turning occasionally, until cooked through (internal temperature 71°C / 160°F).
  7. Serve with tzatziki, coleslaw, flatbread, and grilled vegetables.
