  • 6 egg (s)
  • 1 avocado (s)
  • 1 tablespoon lime juice
  • salt and pepper
  • 1 small tomato (s)
  • 1 small shallot (s)
  • 1 tablespoon coriander greens
  • 1 clove garlic
  • some chili

Instructions

  1. Boil the eggs hard and chill them in an ice bath or let them cool down well in cold water.
  2. Then peel and halve all the eggs and remove the yolks with a teaspoon and place in a bowl.
  3. Add the cut avocado to the egg yolks and mash them together, then add the finely chopped onion, garlic, lime juice, coriander greens and some chilli and mix everything together. Season with salt and pepper. Fold in the diced and pitted tomato. If you don`t like coriander, you can also use parsley.
  4. After everything is well mixed, fill the eggs with the guacamole. Works best with a small spoon.
  5. Garnish with a sheet of coriander or parsley and serve.
  6. As a small starter or on a buffet.
