Ingredients

  • 250 g cheese (baked cheese), cut into 2 x 2 cm cubes
  • 1 bell pepper (s), cut into 2 x 2 cm cubes
  • 1 onion (s), halved and cut into half rings
  • 6 mushrooms, halved
  • 1 clove garlic
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • Lemon juice
  • salt and pepper
  • 3 tablespoon olive oil
  • 0.5 ½ lemon, which only the juice
  • 1 bunch parsley, finely chopped

Instructions

  1. Mince the garlic clove. In a bowl, combine 3 tablespoons olive oil, juice from roughly half a lemon, minced garlic, 1 teaspoon thyme, 1 teaspoon oregano, and 1 teaspoon rosemary. Season with salt and pepper. Cover and refrigerate for 24 hours.
  2. Heat a large pan over medium-high heat and add the herb-infused oil mixture.
  3. Add the bell pepper cubes, onion pieces, and mushroom halves. Fry for 3-4 minutes, stirring occasionally, until the vegetables soften slightly.
  4. Add the halloumi cheese cubes and fry for another 2-3 minutes until the cheese is golden and slightly crispy.
  5. Remove from heat. Top with finely chopped parsley and a squeeze of fresh lemon juice. Serve warm.
