Ingredients

  • 24 potato (s), washed clean
  • 24 bay leaves, fresher, halved lengthways
  • 4 tablespoon olive oil, good
  • 15 g butter
  • 1 clove garlic, pressed
  • Sea salt, coarse
  • Pepper, freshly ground

Instructions

  1. Place the unpeeled, clean potatoes * with the flat side on the cutting board and make 2-3 milli thin cuts across the longitudinal axis so that the cuts do not cut through the potato. Put 2 halved bay leaves into the slices of each potato, spreading them well.
  2. Leave the olive oil and butter in a roasting pan and stir the garlic in the fat over medium heat. Add the potatoes one by one by hand and fry until they turn color, turning so that the fat is well distributed.
  3. Remove and sprinkle with sea salt and season with pepper.
  4. Place on a baking sheet and bake in a preheated oven (electric stove 190 °, convection approx. 170 °) for about half an hour until golden brown, the cuts open like fans.
  5. Good as a main course with herbal quark or cremé fraiche and salad, great side dish with smoked salmon, also good with roasts with sauce.
