Cook: 1 hour 20 mins

Ingredients

For the test:

  • Milk – 300 ml
  • Butter – 30 g
  • Flour – 360 g
  • Salt – 0.5 teaspoon.
  • Sugar – 0.5 teaspoon.

For filling:

  • Hard cheese – 100 g
  • Boiled sausage (or ham) – 100-150 g
  • Tomato (small) – 1 pc.

For breading:

  • Eggs – 2 pcs.
  • Breadcrumbs

For frying:

  • Vegetable oil

Directions

  1. Before preparing heart pies with sausage, cheese and tomatoes, we prepare all the necessary products. During the cooking process, you will also need a large cookie cutter in the shape of a heart, but if you make a snack for no particular reason, then the dough blanks can be cut out with an ordinary glass – you will get round pies.
  2. Add salt, sugar and butter to a saucepan with milk.
  3. Bring everything to a boil and remove from heat.
  4. Immediately add flour to the hot mixture and mix first with a spoon (while the mixture is still hot), and then knead the custard dough with your hands.
  5. The choux pastry should be soft, but not sticky to your hands. After that, cover the dough with a towel and leave for 15-20 minutes.
  6. Now let’s get down to stuffing. Rub the cheese on a fine grater. Cut the sausage (ham) into small cubes.
  7. Cut the tomato into small triangles. It is advisable to remove the juice with seeds.
  8. Mix the sausage with cheese.
  9. Divide the dough in half. Roll each part into a layer 2-3 mm thick.
  10. On one layer of the dough with a mold we outline the places where the filling will be located.
  11. Carefully lay out the sausage and cheese filling into the outlined hearts, trying not to protrude over the edges. On top of the filling, in the center, lay out 1-2 slices of tomato. You do not need to put too many tomatoes, as they can let the juice flow and the pies will come apart.
  12. Cover the filling with the remaining rolled dough on top and lightly press the dough with your fingers along the edges of the hearts so that they are easy to spot.
  13. Then we cut out the heart pies with a mold.
  14. Once again, go over the edges of the blanks with your fingers (or a fork) so that the edges of the dough stick well.
  15. Beat the eggs until smooth.
  16. Dip the blanks-hearts first in beaten eggs, and then roll in breadcrumbs.
  17. Fry pies with sausage, cheese and tomatoes on both sides in a pan with heated vegetable oil.
  18. You do not need to make too much fire so that the breading does not burn.
  19. Put the finished fried pies with sausage, cheese and tomatoes on a napkin so that the excess oil is absorbed. Serve the mini-pies “Hearts” hot.

Bon Appetit!
