Ingredients

  • 1 packet puff pastry, rounder, fresh
  • 150 g quark, medium fat
  • 200 g cheese, Gruyere or Appenzeller
  • 3 egg (s)
  • 200 g rapes, seedless, liht, firm
  • nutmeg
  • salt and pepper

Instructions

  1. The puff pastry is rolled out and made to fit an approx. 26 cm round quiche pan. Pull up the edge and cut straight off at the edge.
  2. Mix the quark with the egg yolk. Beat the egg white until stiff, grate the Gruyere and fold into the egg whites. Mix carefully with the quark mixture, seasoning with salt, freshly ground black pepper and a little nutmeg. Spread the cream on the puff pastry, spread the (washed and dried) grapes on top - as small as possible. Halve larger ones if necessary.
  3. Preheat the stove to 225 degrees, with convection 200 degrees is sufficient. Bake on the middle shelf for 10 minutes, then bake for 15-20 minutes on a lower heat (200/170 degrees).
  4. Enjoy with a cool, dry white wine.
