Ingredients

  • 250 g lentils, dried, soak in water
  • 1 onion (s)
  • 2 large carrot (s)
  • 2 large potatoes
  • 1 piece (s) celeriac
  • 1 piece (s) bacon rind
  • 2 tablespoon rapeseed oil
  • 1 dash vinegar
  • 1 tablespoon mustard
  • 1 liter vegetable broth
  • 4 sausages, hearty and / or Kassel slices
  • salt and pepper
  • sugar
  • nutmeg
  • Parsley, finely chopped

Instructions

  1. Peel the onion and cut into fine cubes. Clean and dice the root vegetables. Fry everything together in a saucepan with oil and the bacon rind.
  2. Depending on the type of lentils, soak them (observe the packaging information) and add to the vegetables with any remaining soaking water. Let the soaking water boil off. Then deglaze with vinegar and let it boil. Add the vegetable stock, potatoes cut into pieces and mustard. Let everything simmer for about 20-30 minutes.
  3. Cut the sausages or smoked pork into bite-sized pieces, add them and let them infuse in the stew. Season with salt, pepper, nutmeg and sugar and add finely chopped parsley.

  5. Pour into a soup tureen and enjoy!

  7. Stews taste almost twice as good the next day, if they are really pulled through!
