Ingredients

  • 700 g zucchini
  • 500 g pasta
  • 600 g sausaes (ham and pepper bite)
  • 250 g cocktail tomatoes or cherry tomatoes
  • 200 g cream cheese
  • 100 ml vegetable broth, from 2 - 3 tablespoon instant broth
  • 1 bunch parsley
  • oil

Instructions

  1. Cook the pasta according to the instructions on the packet.
  2. Wash the zucchini, cut in half lengthways and then cut into small pieces. Slice the sausage at a slight angle into approx. 1-2 cm thick slices. Wash and halve the tomatoes.
  3. Fry the noodles in a large pan (I use a roaster or a large rectangular pan) in a little oil so that they are lightly browned. Then put the pasta in a large bowl.
  4. Now fry the ham chili peppers in the large pan for about 5 minutes. Then add the zucchini and fry for about another 10 minutes. Add the tomatoes and let everything simmer for about 10 minutes.
  5. Bring the vegetable stock to the boil and dissolve the processed cheese in it. Pour into the pan and let it steep for a moment.
  6. Add the contents of the pan to the pasta in the bowl and mix everything well. Mix the chopped parsley into the salad.
  7. Tastes best when everything is well drawn and cold, but also very tasty as a warm lunch.
