Ingredients
- 1 roll (s) goat cheese, approx. 80 g, nicely ripened
- 0.5 ½ pack goat cream cheese
- 1 cup cooking cream, approx. 50 - 200 g
- 4 egg (s)
- 4 tablespoon, heaped parmesan, grated
- 2 tablespoon, heaped mustard, grainier, hearty (Moutarde a l`Ancienn), possibly more
- salt and pepper
- 1 sprig rosemary (s), remove the needles
- 1 small Spring onion (s), very finely chopped
- 5 fig (s), fresh, ripe
- 1 packet puff pastry, rounder

- Whisk the goat cream cheese, cream and eggs, parmesan, mustard, salt and pepper with the magic wand. As always with oven dishes, the mass should be a little over-seasoned and taste strong.
- Roll out the dough in the quiche or tart pan. Slice the onions very finely and spread them on the dough. Cut the goat cheese roll into slices and spread on the dough.
- Now distribute the icing on the dough. Divide the figs into quarters and spread over the cream mixture. Pluck the rosemary needles and distribute evenly over the quiche.
- Bake in the hot oven on the second rack from the bottom at about 200 ° C top / bottom heat for about 30 - 40 minutes, the edge should be brown and the surface golden brown.
- The puff pastry makes the quiche nice and crispy, but you can of course also use shortcrust pastry.
- The goat cheese roll and onions make the taste wonderfully hearty. Suitable for everyone for whom recipes with fresh figs are otherwise too sweet.
