Ingredients

  • 2 onions)
  • 2 cloves garlic)
  • 2 red pepper (s)
  • 40 g butter
  • 850 ml sauerkraut, (can)
  • 2 tablespoon tomato paste
  • 750 ml poultry stock
  • 400 g Cabanossi
  • salt and pepper
  • 1 pinch (s) sugar
  • Paprika powder, noble sweet
  • 1 bunch chives
  • Cayenne pepper

Instructions

  1. Finely dice the onions and garlic. Cut the bell pepper into small cubes.
  2. Heat the fat in a large saucepan and sauté the onion and garlic until translucent. Add the sauerkraut and sauté for approx. 5 minutes while stirring. Add diced paprika and tomato paste and sauté briefly while stirring. Deglaze with broth, bring to the boil and simmer covered for approx. 30 minutes.
  3. Cut the sausage into thin slices, add to the soup and heat. Season to taste with the spices and sugar.
  4. Scatter chives on the soup and serve with strong farmhouse bread.
