Ingredients
- 225 g spelled flour, type 1050
- 50 g wheat flour, type 5
- 1 packet tartar baking powder, 8 g
- 0.5 teaspoon ½ salt
- 0.5 teaspoon ½ herbal salt
- 50 g butter, soft
- 100 g cheese, youn Gouda in slices
- 3 teaspoons, cut Dijon mustard
- 100 ml milk
- 50 ml water

- First cut the cheese into fine strips and then into very fine cubes.
- Dissolve the mustard in milk and water. Mix the flour, salt, baking powder, stir in the remaining ingredients and cheese and knead with the dough hook to form a smooth dough until it loosens from the edge. Knead the dough thoroughly on a lightly floured work surface. The dough is slightly sticky.
- Divide into 10 portions with damp hands (approx. 66 g each). Cut crosswise at the top with scissors. Place on a baking sheet lined with baking paper and bake in a non-preheated oven at 220 ° in the middle for approx. 20 minutes until golden brown.
