Ingredients

  • 250 g beans, white, dried
  • 2 cloves garlic)
  • 1 teaspoon, heaped thyme, dried
  • 1 bay leaf
  • 1 chilli pepper (s), dried
  • 0.5 teaspoon ½ baking soda
  • 1 bone, (ham bone), smoked, with meat
  • 250 g bacon, streaky smoked
  • 500 g potato (s)
  • 400 g onion (s)
  • Goose lard or other fat for frying
  • milk
  • Meat broth or vegetable broth
  • salt and pepper
  • Vegetable broth, grained

Instructions

  1. This stew can be prepared well and finished in several stages.
  2. Soak the white beans in enough, but not too much, water the night before.
  3. The next day, cook the beans with salt, spices, ham bones and bacon until soft. It is best to let the beans boil quietly for a while without a lid until the foam has receded. Then cook covered (also in the pressure cooker) until soft. Take the ham bone and the bacon out of the pot, cut the bacon into bite-sized pieces, cut off any meat still attached from the ham bone and add the bacon and ham back to the beans. It won`t harm the stew if the beans sit for a while after cooking.
  4. Dice the onions and potatoes, fry them well in the goose lard, but do not brown. Then fill with the stock until the vegetables are evenly covered and simmer gently to the point of cooking. Mash some of the potatoes.
  5. Now put the beans and potatoes together in a saucepan, stir and fill up with milk (or a mixture of milk and broth) not too liquid, heat together, season well with salt, pepper and instant broth.
  6. If you like, you can add fried bacon or sausages.
  7. The stew can still stand before serving, that`s good for him.
