Ingredients

  • 100 ml olive oil
  • 8 clove (s) garlic
  • 0.5 ½ chilli pepper (s), fresh red
  • 1 kg mushrooms, fresh
  • 1 bunch herbs, as desired
  • 100 ml white wine
  • salt and pepper
  • 1 tablespoon flour

Instructions

  1. For the sauce, finely chop 2 cloves of garlic and mix with the herbs and white wine in a small bowl, season with salt and pepper.
  2. I`ve used all kinds of herbs, e.g. parsley, basil, lovage or a mixture of different fresh garden herbs.
  3. Pour olive oil into a saucepan. Add the remaining 6 finely chopped garlic cloves and sauté briefly over low heat. Chilli and the sliced
  4. Add mushrooms and fry over medium heat, stirring constantly, until mushrooms have given off much of their juice. Season with salt and pepper.
  5. Scatter the flour over the mushrooms and stir in well. Remove from heat and slowly pour in the sauce while stirring so that everything combines well. Put the pot back on the stove and bring the mixture to the boil again, stirring constantly. Simmer for 5 minutes until a relatively thick sauce is formed. Serve hot.
  6. This is a nice side dish with meat or can be eaten as a small meal with a baguette. If you want, you can also vary with fried ham or with onions And recently we had it as a side dish for grilling as a kind of salad - cold - you see, there are many options.
